Amazing Layered Coffee Cake Recipe

Ingredients
Dough:
- 4 yolks
- 4 tablespoons vinegar
- 1 tablespoon dry yeast (½ oz. /14 g)
- 2¼ teaspoons baking powder (⅓ oz. / 10 g)
- 1 cup sugar (7 oz. / 200 g)
- 5 teaspoons vanilla sugar (1 oz. /20g)
- 2½ sticks butter-flavored shortening (300 g)
- 3½ cups flour (if the dough is too sticky, add some more) (15½ oz. /440 g)
Cream:
- 4 egg-whites
- A pinch of salt
- 1 cup sugar (7 oz. / 200 g)
- 4 tablespoons instant coffee
Instructions
- Dough:
- Mix all your dough ingredients. Knead them thoroughly until you get a smooth, homogeneous mixture.
- Place the mixture in a pot, then cover it with plastic wrap. Then place it for a minimum of 3 hours in the fridge. You may leave it overnight for better consistency.
- Cream:
- Beat your egg yolks and add a sprinkle of salt. Regularly add sugar until your cream is smooth and homogenous.
- Add instant coffee and beat your mixture until you get a uniform color
- Cake:
- Take your dough out of the fridge and divide it into 5 equally-sized balls.
- Bring over a baking pan and line it with parchment paper or oil to prevent the dough from sticking.
- Using two parchment papers, roll out your balls until they reach the baking pan’s size. Once you finish, you should have 5 layers similar in dimensions to your baking pan.
- Put your first layer in the baking pan and spread some cream all over it. Top the cream with the chopped walnuts.
- Repeat the previous step 3 more times.
- Don’t add anything on the last layer. Instead, pierce it with a fork to allow for breathability.
