Juicy Semolina Cake Recipe

This semolina cake drenched in simple syrup is so appetizing it’s mind-blowing. It takes the ordinary cake to a whole different level. It’s super moist, soft, and rich.
When you think it can’t get more tempting, you get hit with the crunchy texture of the amazingly delightful candied toasted almonds topping.
You might assume it’s complicated to make, but the opposite is true. It’s just as easy as making a simple cake.
All you need is the extra five minutes to make the syrup and caramelized almonds.

Juicy Semolina Cake Recipe
Equipment
Ingredients
Cake:
- 6 eggs
- 1 cup sugar
- 1 cup oil
- 1 cup orange juice
- 2 cups semolina
- 1 cup flour
- 2¼ tsp. baking powder (10 g)
- 2½ tsp. vanilla sugar (10 g)
- 1 cup shredded coconut
- 3½ oz. Lotus Biscoff cookie crumbs (100 g)
Glaze:
- 1½ cups sugar
- 2 cups water
Topping:
- 3½ oz. blanched almonds (100 g)
- ½ cup sugar
Instructions
Cake:
- Preheat the oven to 350°F (180°C)
- Add the flour, semolina, baking powder, vanilla sugar, shredded coconut, and cookie crumbs into a large mixing bowl
- Whisk together until combined, then set aside
- Beat the eggs with the sugar in a separate bowl for at least ten minutes until you have a fluffy foam
- Add the dry ingredients to the bowl and fold gently (no electric mixer is needed)
- Add the oil and orange juice
- Keep folding until the batter is fully uniform
- Line a springform pan with parchment paper
- Pour the batter into the baking pan
- Bake for about 35 minutes
Glaze:
- Prepare the simple syrup while the cake is baking by doing the following
- Put the sugar and water into a pot and stir
- Bring the mixture to a boil
- Turn down the heat and let simmer for about ten minutes
- Pour the hot glaze all over the fresh-out-of-the-oven cake
Topping:
- For the topping, you need to caramelize the almonds. Here’s how to do it.
- Put the sugar and almonds into a skillet over medium to high heat
- Stir constantly for at least three minutes until the almonds toast and the sugar caramelizes
- Pour the mixture onto a flat tray lined with parchment paper and spread it out with a spatula or a fork
- Allow it to cool completely
- Break the caramelized almonds with your hand
- Use them to top the cake
