Indulgent Crumb Cheesecake Recipe

Ingredients
Crust & Crumbs:
- 1¾ sticks butter / butter-flavored substitute (200 g)
- 2½ cups all-purpose flour
- 2¼ tsp. baking powder (10 g)
- ¼ cup sugar
- 3 egg yolks
Filling:
- 1 cup heavy cream (500 ml)
- 3 oz. vanilla instant pudding mix (80 g)
- 9 oz. farmer cheese/cream cheese (250 g)
- 1 lb. quark creamy soft cheese 5% (500 g)
- 2½ tsp. vanilla sugar (10 g)
- ¼ cup sugar
Instructions
Crust & Crumbs:
- Preheat the oven to 350°F (180°C)
- Add the sugar, butter, egg yolks, flour, and baking powder into a large mixing bowl
- Mix well until combined and crumbly
- Take the mixture out on a flat surface and knead well until you end up with a soft dough
- Divide the dough into ¾ for the crust and ¼ for the crumbs
- Line a baking pan with parchment paper
- Pat down the crust part with your hand onto the baking pan
- Make sure it’s tightly flattened, and use a fork to poke holes in it
- Bake in the oven
- Take the crumb part of the dough and roll it out
- Place onto a parchment-paper-lined 9-inch (24 cm) round pan or a square pan
- Poke holes in the crust dough and bake in the same oven
- Allow the dough to cool down completely before proceeding with the next steps
Filling:
- Pour the heavy cream with the vanilla instant pudding mix into a mixing bowl
- Whip up the mixture on high speed until you get a stable mixture
- Add the cream cheese, soft cheese, vanilla, and sugar
- Keep mixing until well combined
- Pour the mixture over the crust
- Top the cheesecake with the baked crumbs
- Place the cheesecake in the fridge for a few hours to stabilize
- Serve and enjoy
