Cuisine: Mediterranean

Equipment

loaf pans or 10” round baking pan

Ingredients

  • 2 cups flour
  • 2¼ tsp. baking powder (10 g)
  • 1 tsp. baking soda
  • 2 large eggs
  • ½ cup sugar
  • 2½ tsp. vanilla sugar (10 g)
  • ¾ cup oil
  • A cup of strong boiling tea
  • ½ cup honey
  • ½ jar date spread
  • ½ cup walnut nibs
  • 1 tsp. cinnamon
  • ¼ tsp. ground cloves

Instructions

  • Grab a large bowl, and add eggs, sugar, and vanilla sugar. Beat the mixture using a hand whisker until all the ingredients combine together and the mixture becomes fluffy.
  • Add the oil and honey gradually.
  • In a separate bowl, add all the dry ingredients, which are the baking powder, flour, cinnamon, walnut nibs, and cloves. Stir them well, then add them to the batter in the other bowl.
  • In a cup or a small bowl, mix the date spread with some tea, and add the mixture to the batter. Stir everything until all the ingredients combine.
  • Add the mixture to the baking pan and level its surface using a spatula.
  • If you want to garnish your cake, you can use sliced blanched almonds.
  • Preheat the oven to 40°F (170°C), then put the baking pan inside.
  • Test the cake’s readiness by poking a wooden toothpick inside. If it comes out moist, the cake isn’t ready yet. If it comes out dry, you can take the cake out.
