Honey Cookies Rosh Hashanah Recipe

8 oz. measuring cup (240 ml)
Ingredients
- ½ cup brown sugar
- ⅓ cup oil
- ⅓ cup honey
- 1 egg
- 1 tsp. cinnamon
- Cloves optional
- 2 cups flour
- 1 tsp. baking powder (5 g)
- 1 tsp. baking soda
- 2½ tsp. vanilla sugar (10 g)
Instructions
- Put the brown sugar, honey, oil, cinnamon, cloves, and egg into a bowl and beat everything for 3 minutes.
- To the same bowl, add the flour, baking soda, and baking powder.
- Mix until all the flour is blended into the batter.
- Refrigerate for around 30 minutes.
- Shape the chilled batter into balls.
- Roll each ball into some confectioner’s sugar.
- Line a baking sheet with parchment paper and arrange the cookie balls on top, leaving enough spaces in between.
- Pop the sheet into the oven and bake at 350°F (180°C) for 15 minutes.
Tips
- Don’t forget that you need both baking soda and baking powder for this recipe.
- Make sure you don’t bake the batter beyond 15 minutes—the cookies could end up too firm and dry.
- The cookies can be served as-is, but you could also glaze them if you’re looking for something sweeter.
