A warm, homemade vegetable soup is hands-down the best thing you can eat on a cold wintery night! It’s highly nutritional, delicious, and, best of all, easy to make! You only put all your ingredients in a bowl and wait until they cook.
If you want a protein-free easy meal, you won’t find a better option than this homemade vegetable soup.

Why this Homemade Vegetable Soup is A MUST-try:

Ingredients
- ¾ gallon water
- 2 onions (chopped)
- 2 carrots (peeled and diced)
- 2 zucchinis (peeled and diced)
- 5 oz. pumpkin (peeled and diced (150 g))
- 2 celery stalks (washed and chopped)
- 3 garlic cloves (ground)
- 2 tomatoes (mashed)
- 2 tomatoes (diced)
- 1 chard leaf (cut small)
- 3 tbsp. oil
- 1 tbsp. kosher salt
- ½ tsp. black pepper
- 3 tsp. soup mix (optional)
- 3 tbsp. tomato paste
- 1½ cups small shells pasta
Instructions
- Fill a large, deep pot with water and boil it
- Grab a large pan and heat some oil, then drop all your vegetables to fry them.
- When the veggies are fried, add them to the boiling water, then add the spices and tomato paste.
- Lower the heat and leave the ingredients to simmer for an hour.
- Raise the heat again and add the pasta to the pot, leaving it inside for 10 minutes.
- Serve the pasta soup in a bowl with some sprinkled paprika on top for garnishing!
