Hearty Vegetable and Pumpkin Soup
Equipment
Ingredients
- 1 lb. pumpkin or butternut squash (½ kg)
- 3 carrots
- 2 yams (medium)
- ¼ bushel of cilantro
- 1 onion (medium)
- 1 tablespoon salt
- 1 tablespoon soup mix
- 1 teaspoon white pepper
- 1½ teaspoons turmeric
- 6 tablespoons oil
- Water
Instructions
- Peel the onion, chop it into tiny pieces, then leave it aside. Then, prepare all the other vegetables by peeling them and chopping the cilantro.
- Grab a medium-sized pot and put it over moderate heat. Then, pour a little amount of oil.
- When the oil heats, add the chopped onion and fry it until it reaches a golden color.
- When the onion is ready, throw all other chopped vegetables in the pan, stirring them well.
- After a couple of minutes, season the veggies, making sure to taste to ensure the seasoning is enough.
- Add water to the pan so that it covers the vegetables and exceeds their level by approximately two inches.
- Lower the heat and leave the mixture to simmer for around 45 minutes.
- When the soup is ready, use a hand mixer to soften the veggies, then sprinkle some chopped cilantro on top for garnishing.
- Serve!
