Phyllo dough isn’t easy to work with! It can rip, dry out, or tear apart. Luckily for you, these fan-shaped phyllo sheets are easy to make without any unfortunate incidents! They’re also quick to make, which is a bonus.
You can use any stuffing you want, but our mashed potatoes and stir-fried stuffing will blow your guests’ minds!

Yes, you can use any stuffing you prefer.

- 1 lb. phyllo dough sheets (thawed overnight in the fridge (500 g))
Mashed potato filling:
- 5 potatoes (cooked and mashed)
- 1 onion (chopped and fried)
- A pinch of salt
- Some white pepper
- Some turmeric
Stir-fry filling:
- 1 lb. chicken breast (diced small (½ kg))
- 1 large onion (chopped)
- 1 red bell pepper (cut into strips)
- 2 carrots (cut into thin sticks)
- 1 package champignon mushrooms (sliced (250 g))
- 3-4 tbsp. olive oil
- A pinch of salt
- Coarse black pepper (to taste)
- ½ tsp. sweet paprika
- ½ tsp. turmeric
- A pinch of cinnamon
- 2 tbsp. soy sauce
- 2 tbsp. teriyaki sauce
- 2 tbsp. chili sauce
- 2 tbsp. date syrup
Instructions
Mashed Potato Filling:
- Mix all ingredients together using a masher, making sure to squeeze the onions a bit to let their oil out. Set the bowl aside for later use.
- If you don’t have a masher, you can use a balloon whisk or a hand mixer. If you don’t have both, you can use a wooden spoon, but the potatoes may come out chunky.
- Stir-Fry Filling
- Heat some olive oil in your wok, then add the bell pepper. Stir-fry them for two minutes, then add the chicken pieces. Stir-fry them for another two minutes, then add the carrot sticks. (Make sure to dry the carrot sticks using paper towels before this to avoid a potent reaction with the hot oil)
- Stir-fry everything for a minute or two, then add the mushrooms, salt, black pepper, paprika, and turmeric. Stir well and let the mixture fry for two minutes on medium heat.
- Add all the sauces, and stir the mixture for a minute. Wait for the liquid level to go down, then turn the heat off and let the mixture cool.
Fan-Shaped Sheets:
- Lay a phyllo dough sheet on your work surface, then spray it with cooking spray.
- Push the sheet from the middle of its bottom part upwards using your thumb and index. Get it to the sheet’s top, so that the sheet folds.
- While holding the sheet on the top with your fingers, pull its middle part down using your other hand. Then, adjust the fan shape.
- Put the mashed potato filling on the top part, then add the stir-fry.
- Fold the sheet’s sides to cover the filling, and roll the sheet from the top down until you get the fan shape.
- Put the fan-shaped sheet in a baking pan lined with parchment paper. Spray it with cooking spray, then sprinkle it with some sesame seeds.
- Preheat the oven to 350°F (180°C), then convection-bake the pan until the sheet is golden from all sides with no white dough visible.
Tips
- Whenever working with phyllo sheets, make sure to cover them with a damp towel so that they don’t dry out.
- Phyllo sheets are prone to tears and cracks because they’re so thin, so don’t throw a sheet out if you mistakenly tear it. Just do your best to keep the tear from getting bigger.
- You can use shredded cheese as a topping instead of the sesame seeds
