Everyone loves cookies, but the sugar rush afterward may not be worth it, especially if you have kids.

Well, fret not! We have an amazing recipe for healthy chocolate oatmeal cookies. They’re low in fat and sugar and high in dietary fiber.

Equipment

8 fl. oz. measuring cup (250 ml)

Ingredients

  • 1 cup thick rolled oats
  • 2 cups flour
  • ⅗ cup brown sugar
  • ½ cup walnut nibs
  • ½ cup shredded coconut
  • 1 tsp. baking powder
  • 2½ tsp. vanilla sugar
  • 1 tsp. cinnamon
  • ½ cup oil
  • ¼ cup orange juice
  • 1 tsp. vanilla extract
  • 2 eggs
  • 9 oz. dark chocolate chips (250 g (it’s also good with less))

Instructions

  • Put all ingredients in one large bowl, and start kneading them well.
  • When the mixture is combined evenly, wet your hands with some water, and start forming balls.
  • Prepare a baking pan lined with parchment paper, then put the balls on it, separating them to prevent them from sticking to each other.
  • Gently push on the balls to flatten them a bit.
  • Put the pan in the oven at 350°F (180°C), and leave it inside for 20–25 minutes. Then, serve!
