Hamantaschen cookies have huge significance in the Jewish culture and have been a part of its celebrations for centuries.
Usually eaten on an annual holiday, these cookies are just too delicious to only have them once a year.
For those who don’t know what they are, hamantaschen are triangular-shaped cookies originally filled with poppy seeds. However, you can always use any filling you prefer.

Dough:
- 1¾ sticks butter (soft (200 g) – make sure it’s not melted!)
- 3½ oz. confectioner’s sugar
- 1 tsp. vanilla extract
- 1 large egg
- 12 oz. all-purpose flour (sifted (350 g))
- ½ tsp. baking powder
- Filling – any desired spread: Nutella/chocolate/date
Poppy Seed Filling:
- 1½ cups freshly ground poppy seeds
- ¾ cup sugar
- ½ cup milk
- 1 oz. butter (25 g)
- ½ cup almond flour
- 1 tbsp. honey
Instructions
Dough:
- Preheat the oven to 350°F (180°C).
- Beat the butter and sugar in the mixer using the flat beater attachment for a minute until creamy.
- Add the egg and vanilla extract.
- Keep beating until the egg disappears and the mixture looks uniform.
- Add the dry ingredients.
- Process until you notice the dough forming (no more than a minute).
- Start working with the dough only if it’s not too soft (otherwise, wrap it in plastic and place it in the fridge for 30 minutes.
- Roll small pieces of the dough out thin on a flat surface (no thicker than a ¼ of an inch).
- Fill with your desired filling and close into a Hamantash (triangle) shape.
- Place the cookies one inch apart over a parchment-paper-lined baking sheet.
- Bake for 12–14 minutes.
Poppy Seed Filling:
- Place the milk into a small saucepan.
- Add the sugar, butter, and honey over the milk.
- Boil them over medium heat.
- Add the poppy seeds and almond flour.
- Mix and allow to cool down completely before using.
