They’re also so easy to make, which’s the best when you’re in a hurry and need a quick fix. Plus, those super crispy taquitos are always the star of the show at all parties or gatherings.
Serve them next to the recommended mushroom sauce, and you won’t regret it. Even for picky eaters, those little rolls of heaven are something else.

Equipment
Ingredients
- 12 tortillas
Filling:
- 1 small package of fresh mushrooms (diced)
- 1 tbsp. olive oil
- 1 garlic clove (minced)
- 1 green hot pepper (chopped)
- 2 onions (chopped)
- 1 lb. ground beef (½ kg)
- 2 oz. toasted pine nuts (50 g)
Seasoning:
- A pinch of salt
- Turmeric (to taste)
- Cumin (to taste)
- 1 tsp. soup mix
- 2 tbsp. soy sauce
- Sweet paprika (to taste)
- ½ bushel of parsley
- 1 tbsp. flour
- 1 tbsp. water
- 1 egg
- Breadcrumbs – for coating
Sauce:
- Fresh mushrooms (cut (as many as desired))
- ½ oz. mushroom sauce mix
Instructions
Prepare the Filling:
- Add a tablespoon of olive oil to a large frying pan
- Stir fry the diced mushrooms with the minced garlic clove in the olive oil over medium heat
- Add the chopped green hot peppers, then set aside
- Fry the chopped onions in another pan until they turn translucent
- Add the ground beef and crumble it using a fork
- Stir the ground beef until it changes color (drain any excess grease appearing during the process)
- Add in the previously prepared fried mushroom with hot green peppers mixture
- Add the toasted pine nuts
- Season the mixture with salt, turmeric, sweet paprika, and cumin
- Mix well until everything is combined
- Add the soup mix and soy sauce while continuing to stir
- Keep frying for five more minutes to develop the needed flavors
- Remove from fire
- Chop the parsley finely, add it to the filling, and mix well
- Set aside to cool down a bit
Make the Sauce:
- Dice and saute the mushrooms in a tablespoon of olive oil
- Dissolve the mushroom sauce mix according to the instructions written on the package
- Cook the sauce with the sauteed mushrooms for a few minutes until it thickens
Wrap the Tortillas:
- Warm up the tortillas before use to make them easier to roll
- Add two heaping tablespoons of the filling mix over the tortilla wrap
- Fold in the sides of the tortilla, then roll it up tightly
- Mix a tablespoon of flour with a tablespoon of water and brush the end of the tortilla to stick it closed
- Repeat the process
Fry the Rolls:
- Prepare an egg wash
- Dip each tortilla roll into the eggs
- Coat each roll with a mixture of sesame seeds and breadcrumbs
- Fry in shallow oil until golden
- Place over a paper towel to drain excess oils
- Serve next to the sauce, and enjoy
