It’s never a bad idea to cook lamb shoulder for dinner, is it? But we all know lamb shoulder tastes best when grilled, and not everyone has a grill and an outdoor area for such a recipe.

Well, today is your lucky day! Here, we’ll show you an easy recipe for grilled lamb shoulder chops that doesn’t need an outdoor grill or griddle.

Oven Grilled Lamb Shoulder Chops

Equipment

Oven pan

Ingredients

Roast:

  • Lamb shoulder chop roast
  • 10 garlic cloves

Sauce:

  • 4 tbsp. grainy mustard
  • 6 tbsp. smooth Dijon mustard
  • ½ cup olive oil
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1½ tbsp. honey
  • 1 tbsp. date syrup

Vegetables:

  • Potatoes
  • Shallots
  • A whole garlic
  • Kosher salt
  • Thyme
  • Rosemary
  • Olive oil

Instructions

  • Prepare a baking pan with aluminum foil and place your roast on it. Using a thin knife, make thin slits in the meat and put the garlic cloves in these holes.
  • Grab all your sauce ingredients and mix them, then using your hands, rub the meat with the sauce thoroughly.
  • Move the roast to the center of your baking pan and surround it with the veggies. Drizzle some olive oil, but make sure not to add too much.
  • Top your roast with some thyme, rosemary, and salt, then push the pan into the oven at 425°F (220°C).
  • After 30 minutes, take the pan out and wrap it with aluminum foil. Then, put it in the oven again at 375°F (190°C). This time, leave it inside for two hours.
  • For darker meat and a crispier exterior, uncover the pan for the last 20 minutes.
