Though chickens are some of the easiest meats to cook, they can be tricky! No one wants to end up with a dry chicken or a charred piece that’s underdone from the inside.
The key to a juicy chicken is to leave it enough time to marinate.

Ingredients
- 10 pieces dark chicken boneless fillet
- ¼ cup olive/canola oil (it is recommended to mix them both – half and half)
- 2 tsp. grill chicken seasoning
- 1 tsp. sweet paprika
- 1 tsp. granulated garlic
- ½ tsp. turmeric
- ½ tsp. cumin
- ½ tsp Yemenite Hawaij spice
- ½ tsp. Shish kebab seasoning
- ½ tsp. black pepper
- ½ tsp. salt
- ¼ tsp. ground cardamom
- ¼ tsp. hot paprika (optional – for spicy food lovers)
- 2-3 tbsp. water
Instructions
- Grab the chicken pieces and pack them into a sealable plastic bag. Make sure the bag is big enough for the other ingredients you’ll add.
- Keep the bag open and add the water, spices, and oil in accurate amounts as mentioned in the ingredients section.
- Seal the bag, then shake it well to cover the chicken pieces with all the other ingredients. Make sure the chicken pieces are covered from all sides before putting the sealed bag in the fridge.
- Keep the bag in the fridge overnight to marinate. If you’re preparing the meal for the same day, you can leave it for only two hours or as long as you can.
- You can cook your chicken on a gas grill, a coal grill, or a grilling pan. You can even cook it on a regular non-stick frying pan. Whatever your choice, heat it without oiling it.
- Take the bag out of the fridge and carefully take the pieces out, arranging them on your grilling surface.
- Cook each side for four minutes or more if needed. When the chickens are ready, they should have dark char marks on the outside.
- Serve and enjoy!
