It doesn’t get any easier than this, and We’re not skimping on any nutritional value either, This Carrot salad checks all the marks!

It’s crunchy and full of garlic, lemon juice, and olive oil.

Carrots are a nice snack to have, but we just want to take that snack and turn it up a notch, and maybe we might succeed in raising your expectations and hopefully some eyebrows.

Grated Carrot Salad with Sour Dressing

With a few minutes on hand and some empty containers, you'll stack up on the best carrot salad on the web

Ingredients

  • 5 carrots (cut into thin sticks)
  • 2 scallion stalks (chopped)
  • 4 celery stalks (chopped)
  • Chopped cilantro
  • 2-3 garlic cloves (finely chopped)
  • 1 heaping tablespoon harissa
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ teaspoon cumin
  • Lemon juice
  • Some olive oil

Instructions

  • Chop the carrots into thin sticks
  • Now chop the garlic cloves, scallions, celery, and some cilantro too
  • Toss the spices in there along with some lemon juice and olive oil
  • Mix everything really well, and..
  • Allow it to rest for about an hour to distribute the flavors.

Tips

If you don’t have harissa on hand, you can replace it with sweet paprika or some hot paprika as well.
