Gluten-Free Soft Amaretti Cookies
Ingredients
- 14 oz. walnuts (400 g)
- 3½ oz. ground almonds (100 g)
- 1 tbsp. apricot jam
- 3½ oz. sugar (100 g)
- 2 tsp. baking powder
- 1 egg (up to 2 eggs)
- ½ tbsp. soft butter
- Some orange flower water
- Confectioner’s sugar (for topping)
Instructions
- Grind your walnuts to powder, but make sure you don’t grind them too much. You don’t want the consistency to be sugar-smooth.
- Now, mix all of your ingredients except for the eggs. You’d want to start with one full egg only.
- If the dough’s texture is still sticky, you may add the yolk of the second egg. If it’s still sticky, add its egg white as well
- Wet your hands with orange flower water, and make dough balls in even sizes.
- Roll those dough balls in the confectioner’s sugar.
- Line a pan with parchment paper, and flatten your sugar-coated dough balls on the pan with your hand.
- Preheat your oven to 340°F (170°C) and bake your cookies for 12-15 minutes.
- Remove the cookies from the oven and allow them to cool on a rack for around 20 minutes.
Tips
- If you’ve eaten cookies before, you know how they’re “almost hard but crunchy and soft.” That’s the perfect consistency you should aim for when deciding when to stop the baking between 12-15 minutes.
- After flattening your first cookie dough on the parchment paper, try grabbing it again. If it sticks to the parchment paper, rub the parchment paper with a spatula covered in oil. Then try again.
