Ingredients
In bowl #1:
- 10½ oz. almonds (300 g)
- 2½ oz. confectioner’s sugar (70 g)
- 1-2 eggs
- 1 tsp. almond extract
In bowl #2:
- 3½ oz. pistachios (ground (100 g))
- 1 oz. confectioner’s sugar (30 g)
- 1-2 egg yolks
- ½ tsp. pistachio extract
Instructions
- Gently mix bowl #1 ingredients together until they’re well combined.
- Do the same for bowl #2 ingredients.
- Take a little of the almond mixture from bowl #1 and add to bowl #2.
- Mix everything together until thoroughly combined.
- Create one roll from the almond mixture, then create another roll from the pistachio bowl.
- Slowly roll out the almond roll and add the pistachio roll to it.
- Roll the two up together until you have one big roll.
- Slice the mixed roll into small slices that are as thick as your regular cookie.
- Cover the exposed pistachio parts by closing the slices.
- Powder the cookies with confectioner’s sugar.
- Place in the oven and bake at 300°F (150°C) for 15 minutes.
- Serve warm and enjoy with a warm cup of tea or coffee!
