Ingredients

For one pan:

  • 3 eggs
  • ⅓ cup raw tahini (3 floz. / 80ml)
  • ¼ cup date syrup (2 floz. / 60ml)
  • ⅓ teaspoon salt (⅛ oz. / 2g)
  • 1 teaspoon baking soda (¼ oz./ 6g)
  • ½ cup walnuts (you can replace them with craisins, sunflower seeds, or pumpkin seeds)
  • Sesame (sprinkle as needed)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a deep bowl, beat the eggs, tahini, date syrup, and baking soda with a hand whisk to make the batter.
  • Grease the baking pan lightly with oil.
  • Pour the batter into the oiled pan and try to spread it around.
  • Sprinkle some walnuts evenly on the top.
  • Bake the loaf for 20-30 minutes.

Tips

  • When you’re sprinkling the walnuts, make sure not to pile too much in one spot as they could sink the batter down.
  • Don’t shy away from customizing your own toppings with craisins or seed mixtures.
  • To avoid taking the bread out too soon, do the toothpick test to check if the bread is done baking.
