Cake:
- 4 large eggs
- ⅓ cup light brown sugar
- ⅓ cup granulated sugar
- ½ cup canola oil
- ½ cup + 2 tbsp. honey – optional: replace with date syrup (220 g)
- ½ cup strong tea
- 2 cups all-purpose gluten-free flour
- 2¼ tsp. baking powder (10 g)
- 1 tsp. cinnamon
Coating:
- 4 tbsp. honey
- A handful of sliced almonds (optional)
Instructions
Gluten Free Honey Cake Instruction
- Preheat the oven to 330°F (165°C)
- Make sure the oven stays at the same temperature to keep the cakes from overflowing
- Brew half a cup of tea by leaving the teabag in hot water for five minutes
- Allow the tea to cool down for about ten minutes after removing the teabag and before you use it
- Add the eggs, brown sugar, canola oil, granulated sugar, honey, and tea in a large mixing bowl
- Hand-beat the mixture until you have a smooth batter
- Add in the gluten-free flour, cinnamon, and baking powder gradually
- Keep hand beating the mixture until well combined (avoid overbeating the batter)
- Pour the mixture into the two oiled loaf pans
- Tap the loaf pans on the countertop twice to release any trapped air bubbles
- Place the two loaf pans over the center oven rack and bake for 45–50 minutes until the cakes are dark and bouncy
- Do the toothpick test to ensure the cakes are cooked all the way through (it’s completely normal to notice cracks on the cake’s surface)
- Take the cakes out and pour two tablespoons of honey on each one while still hot (the honey becomes runny due to the heat)
- Use the back of a spoon to cover the cakes in an even layer of honey by spreading it all over their surface
- Top the two cakes with sliced almonds (if you prefer)
- Slice and enjoy
Tips
- It’s better to bake the cakes one day in advance, as this makes them taste better and become even moister.
- You have the option to combine your desired addition within the cake’s batter, such as diced apples with some sugar or honey.
- You can also add half a cup of chopped walnuts for a crunchy surprise.
