- 2 tbsp. organic mayonnaise
- 1 oz. unflavored egg-white protein powder (35 g)
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- 1 tbsp. finely ground sweetener
Instructions
- Separate the egg whites and put them in a bowl. Make sure to avoid adding any yolk, as the high fat content will prevent the eggs from foaming.
- Gradually add the sweetener and salt to achieve high volume and a smooth texture.
- Continue beating the egg whites until they’re firm; you should be able to flip the bowl without the foam falling.
- Add the rest of the ingredients and beat in short pulses.
- Continue beating until the mixture is smooth and free of any clumps.
- Line a 7” (18 cm) springform pan with parchment paper.
- Transfer the dough to the pan.
- Bake at 350°F (175°C) for 20 minutes or until the crust is golden brown. Make sure the oven is preheated.
- Once baked, take the pan out of the oven and drizzle olive oil or butter on top.
