Luckily, you can find hundreds of recipes as substitutions for all kinds of foods, from sugar-free desserts to gluten-free pastries. However, our gluten-free brioche buns are the best of all.

 Once you get a taste of that soft texture, you won’t have them any other way. Whether you make them for yourself, your family, or your guests, they sure will steal the show.

Psyllium is a liquid-absorbing and thickening ingredient. It’s useful in gluten-free baking and helps the batter turn doughy.


Is this recipe suitable for people with diabetes?

As far as we know – yes, because it’s good for a ketogenic diet. In a ketogenic diet, the idea is not to raise the insulin level. However, you should consult a certified nutritionist regarding this matter, as we can’t recommend nutritional advice when there’s a medical issue involved.

Equipment

Medium-sized baking pan

Ingredients

  • 1½ cups flax seeds (finely ground)
  • 2 eggs
  • 2 tbsp. psyllium
  • 2 tbsp. raw tahini
  • 1 tbsp. baking powder
  • 1 cup warm water
  • A pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  • In a large bowl, place the ground flax seeds, baking powder, psyllium, and a pinch of salt.
  • Whisk together thoroughly.
  • Add the eggs over the dry ingredients and mix well.
  • Add the raw tahini and water.
  • Keep whisking until the mixture is fully combined (it should feel sticky to the touch).
  • Set the dough aside to rest for five minutes.
  • Wet the dough a little, just like you oil a regular dough.
  • Using wet hands, cut and roll the dough into balls.
  • Place the dough balls over the parchment-paper-lined baking pan.
  • Slightly flatten the balls to give them a half-circle look.
  • Bake for about 35 minutes.
  • Allow to cool a little before slicing the buns open.

Tips

Here are a few filling ideas to enjoy inside these gluten-free buns:
  • Avocado, lettuce, and tomato slices.
  • Burger, lettuce, and onion slices with mayonnaise.
  • Philly cheese steak.
  • Grilled chicken breast, lettuce, and grilled vegetables.
  • Tuna salad.
  • Cream cheese with fresh herbs.
