The surprising thing here is that you’ll hardly be able to tell that these patties aren’t fried.
After all, the cheese mixes, baking mold, and cook time have been chosen quite carefully to keep the texture and flavor profile interesting.

Gluten Free Baked Cheese Fritters: Crispy Snacks
Equipment
Ingredients
- 9 oz. Bulgarian/feta cheese (250 g)
- 7 oz. Philadelphia cheese / quark creamy soft cheese (200 g)
- 3½-5 oz. Gouda/Edam/Caciocavallo cheese (shredded (100-150 g))
- 5-6 basil sprigs (or other herbs; oregano, thyme, parsley, etc.)
- 5 eggs (L)
- 1 tsp. baking powder (aluminum-free)
- ⅓-⅔ cup almond flour
- A pinch of Himalayan/Atlantic salt
- Some coarse black pepper
Instructions
- Preheat your oven to 340°F (170°C).
- In a bowl, grate the Bulgarian/feta cheese. (Check the tips section for alternative prep techniques.)
- Add the remaining ingredients to the same bowl and mix everything to create the batter.
- Grab your muffin pan and oil it well to prevent sticking.
- Scope the fritter batter into the tin but don’t fill the muffin molds all the way up.
- Bake the tin for around 20 minutes.
- Let the baked goodies cool down before prying them out of the mold.
Tips
- If you don’t want to grate the Bulgarian/feta cheese, just mash it with a fork.
- Don’t use a regular baking sheet for this recipe—the oiled muffin tin preserves the shape and keeps the fritters from spreading.
- You only want to fill the mold with enough batter to create a relatively thin fritter, not a full-on muffin.
- You’ll know the batter is done cooking when it’s all firm and darkened.
- If you have a particularly sensitive stomach, double-check that all the cheeses you use are labeled “gluten-free.”
