It’s a lazy afternoon – it’s your day off and you’re lying around when suddenly you start craving something sweet,

But that gluten allergy holds you from the simplest things you can enjoy. Well, we have just the right thing for you.

Today’s Gluten Free and Zero Sugar apple cake will hit the spot so hard it’s going to leave a hole in the bullseye, and if that doesn’t cut it, then the crunchy walnuts will fill that void for sure!

Ingredients

  • 3 large ‘Pink Lady’ apples (peeled and diced)
  • 4 eggs
  • ¾ cup brown sugar (Optional 5 oz. /165g)
  • 2 tsp. cinnamon (¼ oz. / 6g)
  • ½ cup coconut oil (melted)
  • ½ cup soy milk (with no added sugar )
  • 1 cup quinoa flour (4⅓ oz. /125g)
  • 1 cup almond flour (4⅓ oz. /125g)
  • 1 tsp. baking powder (⅛ oz. / 3g)
  • ½ cup walnut nibs (2⅛ oz. /60g)

Instructions

  • Start by dicing the apples and place them in a bowl
  • Then sprinkle a teaspoon of cinnamon and an optional teaspoon of brown sugar and Mix them well
  • In a separate bowl crack the eggs and add a cup of brown sugar and start beating
  • Now add coconut oil and soy milk and keep beat until everything is combined.
  • Proceed by dropping the apples into the batter and mix again
  • Add flour and baking powder and mix well with a rubber spatula until the mixture is evenly combined
  • When done with the batter, go on and pour it into a rectangular parchment paper lined baking pa
  • In a separate small bowl mix walnut nibs with a teaspoon of cinnamon and a teaspoon of brown sugar, and evenly coat the cake with it
  • Bake in a preheated oven at 340°C (170°C) for 30-35 minutes, until the cake is nice and golden
  • Wait until it cools down and cut it into even squares and serve.
