Today’s gluten free apple cake recipe will hit the spot so hard it’s going to leave a hole in the bullseye, and if that doesn’t cut it, then the crunchy walnuts will fill that void for sure!

Gluten-Free 0-Sugar Apple Cake Recipe

Ingredients
- 3 large ‘Pink Lady’ apples (peeled and diced)
- 4 eggs
- ¾ cup brown sugar (Optional 5 oz. /165g)
- 2 tsp. cinnamon (¼ oz. / 6g)
- ½ cup coconut oil (melted)
- ½ cup soy milk (with no added sugar )
- 1 cup quinoa flour (4⅓ oz. /125g)
- 1 cup almond flour (4⅓ oz. /125g)
- 1 tsp. baking powder (⅛ oz. / 3g)
- ½ cup walnut nibs (2⅛ oz. /60g)
Instructions
- Start by dicing the apples and place them in a bowl
- Then sprinkle a teaspoon of cinnamon and an optional teaspoon of brown sugar and Mix them well
- In a separate bowl crack the eggs and add a cup of brown sugar and start beating
- Now add coconut oil and soy milk and keep beat until everything is combined.
- Proceed by dropping the apples into the batter and mix again
- Add flour and baking powder and mix well with a rubber spatula until the mixture is evenly combined
- When done with the batter, go on and pour it into a rectangular parchment paper lined baking pa
- In a separate small bowl mix walnut nibs with a teaspoon of cinnamon and a teaspoon of brown sugar, and evenly coat the cake with it
- Bake in a preheated oven at 340°C (170°C) for 30-35 minutes, until the cake is nice and golden
- Wait until it cools down and cut it into even squares and serve.
