What flour is best to use?

Any gluten-free flour is good enough. Though, if you use self-rising flour, skip the baking powder.

Coffee’s Best Friend: Gluten-Free Almond Biscuits

Now you can have your gluten-free biscuits with your dairy-free coffee

Ingredients

  • Zest from 1 lemon or orange
  • 1¼ stick soft butter (or butter substitute (130 g))
  • 1 cup ground almonds
  • 1 tsp. baking powder
  • ½ cup confectioners’ sugar
  • 1¼ cups gluten-free flour

Instructions

  • Heat the oven to 350°F (180°C).
  • Mix the butter (or substitute) in a bowl with the confectioners’ sugar until pasty—you can mix by hand or in a mixer with a flat beater.
  • Add the rest of the ingredients and keep mixing just until the dough is smooth.
  • Take a grape-sized piece from the dough, roll it into a ball, then turn it into a cylinder.
  • Place the little cylinders on a cookie sheet bent to create the crescent shape—you can leave it as a ball if you’d like.
  • Bake in the oven until slightly golden on the edges and the cookies are still white—for about 12 minutes.
  • Remove, and allow to cool.
  • Powder with confectioners’ sugar.
