It’s a healthy combination of different vegetables, a heap of tuna, and a zesty dressing that can satisfy any palate!

Ingredients

  • 2-3 medium-sized potatoes
  • 1½ cups green beans / peas
  • 1 can of tuna
  • 2 tbsp. dried cherry tomatoes
  • 1 tbsp. lemon juice
  • pepper
  • 1 tsp. chopped pickled lemon (optional)

Dressing

  • 2 tbsp. mayonnaise
  • 1 tsp. mustard
  • 1 tbsp. vinegar
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1 tsp. chives
  • 1½ tsp. sugar (melted)
  • black pepper

Instructions

  • In a pot, cook the potatoes in boiling water for about 40 minutes.
  • Once they’re all soft, allow them to cool and set them aside.
  • In the same or separate pot, soak the green beans or peas in boiling water for 7 minutes, and then transfer them to ice water. Set aside.
  • Next, strain the canned tuna.
  • In a bowl, mix the tuna together with dried cherry tomatoes, a tablespoon of lemon juice, some pepper, and chopped pickled lemon (optional).
  • In another bowl, mix all of the dressing ingredients, adding the black pepper and melted sugar last. Mix until well combined.
  • Slice the potatoes and plate them on a serving dish.
  • In the middle of each potato slice, put a heaping teaspoon of the tuna salad and dressing. Put a teaspoon of the dressing too.
  • Make space in the middle of your serving dish and put all of the green beans or peas there.
  • Finally, add the rest of the dressing around the serving dish.
