Garlic Cheese Pull Apart Bread From Scratch

Dough:
- 2 lbs. flour (1 kg)
- 2 tbsp. dry yeast
- 2 cups milk
- ½ cup olive oil
- ½ cup sugar
- 1 tbsp. salt
- ½ cup water
Seasoning Mixture:
- A bushel of parsley
- A bushel of dill
- Basil
- Minced garlic
- Salt
- Coarse black pepper
- 1½ cups olive oil
Cheeses:
- Parmesan
- Feta cheese
- Mozzarella
- Edam
Instructions
- In a large bowl (or the bowl of a mixer), whisk together the milk and sugar until dissolved.
- Add the yeast and mix.
- Cover the bowl and leave aside for about ten minutes until the mixture becomes foamy.
- Add the rest of the dough ingredients to the yeast mixture.
- Knead on medium speed for ten minutes (you can knead with your hand).
- Transfer the dough to a greased bowl, cover it, and allow it to rise for one hour.
- Chop all the greens into tiny pieces and place them into a bowl.
- Add the minced garlic, salt, black pepper, and olive oil over the chopped greens.
- Mix well until combined.
- Deflate the dough gently with your fist, cover again, and let rest for an additional five minutes.
- Transfer the dough onto a floured surface and divide it into 2½ oz. (70 g) balls.
- Roll out each ball into a four-inch disk and stuff it with the cheese mixture.
- Enclose the dough disks tightly and roll them back into balls.
- Place the balls tight into a baking pan like you do with monkey bread and allow them to rise for 20 minutes.
- Brush the balls thoroughly with the seasoning mixture, and bake at 350°F (180°C) for 20 minutes.
- Remove from the baking pan, brush again with the seasoning mixture, and place back in the oven for another 10 minutes.
- Serve and enjoy.
