- 3 potatoes
- 1 onion
- 4 tbsp. flour
- 2 eggs
Seasoning:
- ½ tsp. salt
- ¼ tsp. black pepper
- 1 tsp. soup mix
- ¼ tsp. turmeric
- ½ bushel of parsley (chopped)
Instructions
- Wash and peel the potatoes
- Boil them in water until soft
- Mash the potatoes and leave them aside to cool down (cold mashed potatoes are easier to handle than warm)
- Grate the onion and add it to the mashed potatoes
- Add four heaping tablespoons of flour and two eggs
- Mix well until the eggs and flour disappear
- Sprinkle the salt, black pepper, soup mix, turmeric, and chopped parsley over the mixture
- Mix well until everything is combined
- Heat the frying pan with half an inch of oil over medium heat (or preheat the oven)
- Form the patties and fry them until golden (or bake at 400°F (200°C) for 10–15 minutes)
