Guilt-Free Flourless Almond Cake Recipe
Ingredients
- 1 cup ground whole almonds/almond meal (or almond flour) (5⅛ oz/145 g)
- ½ cup shredded coconut (1⅓ oz/38 g)
- ½ cup coarsely chopped walnuts (2⅛ oz/60 g)
- 1 teaspoon baking powder (0.17 oz/5 g)
- 3 eggs
- ½ cup sugar OR the equivalent ½ teaspoon of stevia-based sweeteners (3.5 oz/100 g)
- ½ cup flavorless oil (4 fl oz/120 ml)
- ½ a fresh lemon for zest and juice
- 1 teaspoon vanilla extract (0.17 fl oz/5 ml)
Instructions
- Preheat your oven to 338℉ (170℃)
- Let the eggs sit outside for 20-30 minutes
- Beat the unseparated eggs well with a mixer on high speed
- Gradually, add the sugar while beating the eggs
- Add the rest of the wet ingredients (lemon juice, oil, and vanilla) and mix
- Add the dry ingredients (baking powder, walnuts, almonds, coconut) and keep mixing
- Grease the baking pan with a few drops of oil or butter
- Pour mixture into the pan but leave an inch for rising
- Bake for 45 minutes and test the core with a toothpick
- Let the cake cool down for a few minutes before removing it from the pan
Tips
- The stevia sweetener is used here because we wanted to keep this flourless almond cake recipe healthy, but you can use regular white sugar if you don’t mind the extra calories.
- Almond flour adds a nice earthy flavor to the recipe. However, you can easily swap it for a ¼ cup of coconut flour.
- Similarly, walnuts and coconuts can be adjusted or replaced according to your liking. Any ground nut mix will do fine for this almond cake recipe.
- The lemon zest and juice are mainly there to add a citrusy aroma. You can use orange instead. Or you can skip this step altogether if you’re not a fan of citrus in your desserts.
