Extraordinary Fish Stew Recipe
Ingredients
- 4 tilapia fillets (soaked in a bowl with lemon for an hour)
- 1 red bell pepper (cut into strips)
- 1 orange bell pepper (cut into strips)
- 2 soft red tomatoes
- 1 head of garlic (peeled)
- 1 green hot pepper
- 2 carrots (sliced)
- 1 bushel of cilantro (chopped (without the stalks))
- 1½ cups sunflower oil (360 ml)
- 2 tbsp. sweet paprika in oil
- ½ tsp. turmeric
- ½ tsp. cumin
- ½ tsp. black pepper
- 1 tsp. salt
- 2 cups water
Instructions
- Preheat some sunflower oil in a low, spacious pot. Throw in all the veggies (not the cilantro). If you don’t want to use too much oil for health reasons, substitute half of it with water to make up for the lost moisture.
- Thoroughly fry the veggies, mixing in the black pepper, turmeric, cumin, and paprika in the process.
- Pour in some water and thoroughly mix it with the oil. Add the salt.
- Once the mix has boiled, add the tilapia fillets on top of the veggies. Make sure the fillets’ skin is down.
- Shake the pot sideways carefully to get the sauce all over the fish fillets.
- Sprinkle the chopped cilantro on top of the fish.
- Let the stew cook for a maximum of 10 minutes. An hour before serving, reheat it on a hot plate. Bread and salads make great side dishes with this stew.
