I get it—it can be hard to find a way to feed your kids vegetables without spending a lot of time being creative about it so that the outcome is both flavorful and nutritious. Well, my veggie patties recipe easily fits into that category.

I like that it’s simple to make, requires minimal prep time, and is suitable for breakfast, lunch, or even as a snack. Better still, it’s a favorite of my kids, so it’s bound to impress yours!

The following recipe goes well with many sides, too, like tahini, hummus, and pickles.

Can I bake the patties in the oven?

Yes!

Simply spray them with some cooking spray, spread them on a baking tray, then toss them into the oven until they’re golden brown.


Should I soften up the vegetables a little bit in a pot of water?

No need for that since they already soften up while frying.


Can I replace the zucchini with onions and add another sweet potato?

Sure. That’ll also taste incredible!


Can I use potato starch or all-purpose flour instead of bread crumbs?

I advise against using potato starch or flour because both will yield a pasty taste and texture.

They don’t go well with this recipe.


Is it a good idea to use almond flour or oatmeal for the patties?

Yes!

You’re free to add both; they’ll taste great!

Easy Veggie Patties that Are Perfect for Any Time

Ingredients

  • 3 carrots
  • 2 zucchinis
  • 1 sweet potato
  • 3 potatoes
  • 1 ½ cups breadcrumbs (white)
  • 2 eggs
  • Salt (to taste)
  • Black pepper (to taste)
  • Oil for frying

Instructions

  • Start by grating the carrots, zucchini, sweet potatoes, and potatoes, then strain them to get rid of moisture.
  • Put all the grated vegetables in a deep bowl, then add the eggs, salt, pepper, and bread crumbs.
  • Mix all the contents of the bowl thoroughly until they’re consistent.
  • Pour up to ¾ inch of oil into a marble frying pan and turn up the heat underneath it.
  • Form your patties and fry them in the oil until they’re golden.
