Ingredients
Focaccia:
- 1 lb. flour (½ kg)
- 1 tablespoon dry yeast
- 1 tablespoon salt
- 1 teaspoon dry oregano
- 1 teaspoon dry parsley
- 1 teaspoon dry cilantro
- A pinch of dry chili
- 2 tablespoons olive oil
- 2 cups water (approximately)
Topping:
- 1 eggplant
- 1 bell pepper of each color
- Fresh mushrooms
- 1 onion (chopped)
Instructions
Focaccia:
- Knead all ingredients together until you get a smooth dough.
- Allow to rest and rise for 30 minutes.
- Shape the dough however you like.
Topping:
- Fry all ingredients in olive oil until they soften.
- Add salt and black pepper at the end.
- Transfer the dough with the topping to a baking pan.
- Bake in a preheated oven at 350°F (180°C) for 25 to 30 minutes.
