Course: Soup
Cuisine: Mediterranean

Ingredients

  • 2 large cans of corn kernels (alternatively – frozen corn kernels)
  • 1 medium-sized potato (diced small)
  • 2 onions (chopped)
  • 1½ tsp. salt
  • ½ tsp. black pepper
  • 4 fl. oz. heavy cream (100 ml)

Instructions

  • Take one of the corn cans and strain the kernels until there’s no liquid left.
  • Grind the kernels to a smooth, soft paste and set it aside.
  • In a deep pot, fry the onions until they turn golden.
  • Take the second can of corn and add the kernels—with the liquid— to the pot.
  • Mix everything together, then add the ground corn, potato, salt, and pepper, and stir again.
  • Pour the 2 cups of water into the ingredients and bring everything to a boil.
  • Bring the heat down, cover the pot, and let the mixture cook for about 15–20 minutes—until the potatoes are soft and mushy.
  • Remove the lid and grind everything with an immersion blender until they turn creamy and soft.
  • Finally, add the heavy cream, mix, and enjoy!
