Sponge cakes are generally a delight for their airy and fluffy texture. What sets this cake apart from others is the delicate balance between the tender texture and the sweet apples—or sour if you’d like!
All it would take is two bowls, about thirty minutes, and just a few ingredients from your kitchen. So, are you ready? Let’s begin!

Yes, you definitely can! However, might we suggest using maple syrup instead? It works great as a glaze, and it’s very delicious compared to honey.

In bowl #1:
- ¾ cup oil
- 2 cups self-rising flour
- ½ cup granulated sugar
- ½ cup brown sugar (demerara)
- 4 tbsp. water / orange juice
- 3 eggs
- ¼ tsp. vanilla extract
In bowl #2:
- 3 apples (peeled and diced small)
- 1 handful raisins (optional but adds a lot)
- 5 tbsp. sugar
- 1 tsp. cinnamon
Instructions
- Grab bowl #1 and mix the ingredients until they’re well combined into a batter.
- Do the same for bowl #2.
- Use a cooking spray to oil two loaf pans or a 9” round cake pan (24 cm)
- Slowly pour about ¼ of the batter into the pan and smooth it out with a spatula.
- Add ½ the amount of apples on top of the batter, then mix it all together.
- Pour the other batter quarter on top—don’t worry if you see an apple or two peaking out; it doesn’t cover the entire thing.
- Repeat the process with the second pan.
- Sprinkle some ground cinnamon on top.
- Bake for about an hour in a preheated oven at 340°F (170°C).
- Using a toothpick, poke the cake in multiple spots. If the toothpick comes out clean, then it’s ready! If not, leave it for a few minutes and check again later.
- Once done, poke some extra holes in the cake and drizzle the maple syrup so it can be absorbed inside.
- Using a pastry brush or knife, smooth out the syrup left on top.
Tips
- You can use confectioner’s sugar to decorate the cake.
