Dough:
- 3 cups flour
- 1¾ butter (or butter-flavored substitute sticks (200 g))
- 3 tbsp. sugar (confectioner’s sugar is also important for the end of the process)
- 3 tbsp. orange juice
- 1 egg
- 2¼ tsp. baking powder (10 g)
Filling:
- Date spread (or any other favorite spread)
- Cinnamon
- Walnut nibs
Instructions
- Preheat the oven to 350°F (180°C)
- Place the butter, sugar, egg, and orange juice into a medium bowl
- Mix using your hand or a stand mixer on medium speed with the flat beater attachment until well combined
- Whisk the flour with the baking powder, then add them to the mixing bowl gradually
- Beat until the flour disappears and you get a uniform dough
- Cover the dough with plastic wrap, then place it in the fridge for about 15 minutes before working on it again
- Take the dough out and divide it into two parts
- Roll out each part into a 1/8″–1/4″ thick rectangular sheet
- Spread a good amount of the date spread (or any other preferred type of spread) over the dough
- Leave about one inch off the edges
- Sprinkle with cinnamon and walnut nibs
- Roll up the dough into a cylinder
- Slice the dough into even one-inch-thick discs
- Line a baking sheet with parchment paper and place the cookies over it (two inches apart)
- Bake until the cookies are golden
- Transfer the cookies onto a baking rack and powder them with confectioner’s sugar
- Serve and enjoy!
