One of the easiest and tastiest salads on the web, plus it’s extremely healthy with a crunch to it so you won’t feel bored chewing on a bunch of leaves.
Heck, you can even have it as a main course if you feel like it, it’s so filling that we can practically call it a meal!
The mix of sweet and sour flavors is what makes this cranberry salad so unique, and it’s also a treat to just look at, it will definitely light up the dining table.

Cool and Crunchy Green Cranberry Salad
Ingredients
- Half a bushel of parsley
- Half a bushel of cilantro
- 3-4 celery stalks
- A handful of celery leaves
- A handful of toasted nuts (cashew, walnuts, pecan…)
- A handful of black prunes
- A handful of craisins
Dressing:
- Juice from one lemon
- Salt (to taste)
- Black pepper (to taste)
- Olive oil – in the amount of the lemon juice
- 1 tablespoon balsamic vinegar
- 2 tablespoons date syrup
Instructions
- Start by chopping the parsley, cilantro, and celery leaves
- Then proceed to finely chop the celery stalks
- Coarsely chop the nuts
- Dice black the prunes.
- Mix everything together
- Now beat all dressing ingredients in a separate bowl
- Pour it onto the salad right before serving, toss well, and serve.
