Stuffed Delicacies: Cream Cheese Chocolate Muffins
Equipment
Ingredients
Cupcakes:
- 2 cups semisweet chocolate chips (340 g)
- 1½ cups flour
- 1 tsp. baking soda
- ½ tsp. salt
- ½ cup sugar (100 g)
- ⅓ cup oil (66 g)
- 1 large egg
- 1 tsp. vanilla extract
- 1 cup water
Cream Cheese Filling:
- ¾ cup cream cheese (at room temperature (170 g))
- ¼ cup sugar (50 g)
- 1 large egg
- ⅛ tsp. salt
Instructions
Batter Prep:
- Preheat your oven to 350°F (175 °C).
- Line your tins with paper liners (silicone ones are okay, too).
- Blast half a cup of chocolate chips in the microwave for 45 seconds and stir them around.
- Set the bowl of chocolate aside to cool down.
- Grab a medium-sized bowl and mix the flour with the salt and baking soda.
- In a different (and larger) bowl, beat the eggs with the oil, sugar, and vanilla extract.
- Pour your melted chocolate into the large bowl and mix.
- Start pouring the contents of the medium bowl into the large one gradually, and alternate with small amounts of water.
- Blend everything to make a runny batter.
Filling:
- Using your electric mixer, blend the cream cheese with the egg, sugar, and salt.
- Once it’s homogeneous and creamy, add a cup of chocolate chips.
- Pour the batter into your tins, filling each muffin mold only halfway through.
- Add one scoop of your cream cheese mix on top of the batter.
- Fill up the rest of the muffin cups with batter.
- Pop the tin into the preheated oven and set the timer for 20–25 minutes.
- Once the cupcakes are out of the oven, garnish them using what’s left of the chocolate chips (half a cup).
- Let the tin cool down for around 5 minutes.
Tips
- This recipe makes around 16 standard-size cupcakes, so you’ll likely need more than one muffin tin.
- If your chocolate chips aren’t fully melted after 45 minutes, you can microwave them for an extra 10-second interval.
- It’s important to sprinkle the chocolate chips while the cupcakes are still hot. This way, the chips will warm up just enough to look nice and glossy!
