This corn schnitzel recipe is here to get your kids running to the dinner table! Also, it’s a great meal to serve if you’ve got vegetarian friends coming over or you’re vegetarian yourself.

Ingredients
- 2 cans of corn kernels (550 g each)
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp. salt
- 4 tbsp. olive oil
- 14 tbsp. breadcrumbs
Instructions
- Strain the corn kernels.
- Partially grind the kernels in a food processor until you have a soft paste with some corn clumps.
- Add the two large eggs, a cup of flour, a teaspoon of salt, four tablespoons of olive oil, and 6-7 tablespoons of breadcrumbs.
- Mix until everything is thoroughly blended.
- Now, oil your hands slightly and start forming the famous schnitzel shape.
- Coat the schnitzels with 6–7 tablespoons of breadcrumbs with sesame seeds.
- Finally, fry until golden brown and crispy, then remove to paper towels to drain.
Tips
- Keep your eye on the food processor while grinding the corn; you still want some lumps of corn in there!
- Remember that you’ll use the breadcrumbs twice, once when making the batter and once when coating the schnitzel before frying or baking.
- Depending on your preference, you can either fry or oven-bake the schnitzel. Just ensure it’s at 350°F (180°C) and leave it for about 25 minutes when you bake it.
