Dough:
- 1 XL egg
- 3½ cups flour
- 1 tbsp. dry yeast
- ½ cup sugar
- ½ cup water
- A pinch of salt
- 1 tbsp. oil
- 1 butter stick (100 g – optional: replace with ½ cup oil)
Filling:
- Oil for brushing – optional: replace with soft butter
- 1 cup brown sugar
- 2 tbsp. cinnamon (you can add or reduce in accordance with your preference)
- Walnut nibs
- Egg for brushing
Glaze:
- ½ cup sugar
- ½ cup water
- A segment of lemon
- A drop of vanilla extract
Instructions
- Mix one cup of flour, yeast, and ¼ cup of water in a mixer bowl until well combined.
- Remove the dough from the mixer bowl, place it in another dish, and let it rest for 30 minutes.
- After the half-hour, move the dough into the mixing bowl again and add the rest of the ingredients—add the water gradually!
- Knead for about 10 minutes, then add a tablespoon of oil towards the final minutes.
- Let it rise for another hour.
- As your dough rises, boil the glaze ingredients for 10 minutes in a saucepan, then set it aside to cool.
- Once the dough has risen, flour your countertop and roll the dough into a medium-thick sheet—around ¼” (½ cm).
- After that, brush the dough with oil or butter, and sprinkle the brown sugar, cinnamon, and walnut nibs on top—roll out the dough with the fillings on it so they can stick to the dough.
- Cut your dough into thick, even strips, and roll them into the famous spiral shape.
- Use a sharp, non-serrated knife and cut each spiral into two.
- Place your knife aside and start folding the spirals into each other. Put simply, open one spiral and wrap it around a closed one.
- Continue doing this until you end up with large spirals containing at least four wrapped strips.
- Another thing you can do is cut the dough into thin strips and wrap every four strips into a large spiral—watch out, though, this recipe will leave with massive cinnamon rolls!
- Once you’re done with all the rolling and wrapping, let the cinnamon rolls rise for 90 minutes.
- After that, mix some water, beaten eggs, salt, and sugar together and brush the rolls with it.
- Heat your oven to 350°F (180°C), and convection-bake for about 20 minutes.
- When it’s done baking, take it out of the oven and spread the glaze on top for a delicious dessert!
Tips
- You can save these rolls in the freezer without any issues.
- Replace the butter with ½ cup oil if you don’t have any.
- You can start your dough with an ‘autolyse’—a dough starter— or simply make it the traditional way.
