This coffee Swiss roll recipe has a rich cake layer and a creamy filling. It’s sweet, nutty, and coffee-packed to wake up your senses!

Can I replace the instant coffee with something else?
Yes, you can replace the instant coffee with another flavoring or just skip it altogether.
Do I put ground walnuts only or also self-rising flour?
You should add both ingredients if you want the roll cake to be airy.

In our experience, as long as you replace flour with nut grinds of the same texture, the recipe should come out great.

Cake roll:
- 3 eggs
- ½ cup sugar
- 1 tbsp. oil
- 1 tsp. vanilla extract
- 1 cup ground walnuts (or ½ cup gluten-free self-rising flour + ½ cup ground walnuts)
Filling:
- 2 cups heavy cream (500 ml)
- 1 tbsp. instant coffee
- 1 package vanilla instant pudding mix (80 g)
- ½ cup milk
Instructions
Roll:
- Crack the eggs and separate the yolks from the whites.
- In a bowl, add the sugar to the whites and beat until fluffy.
- In a separate bowl, add the oil and vanilla extract to the yolks and beat until slightly fluffy.
- Add the ground walnuts to the yolk mixture.
- Mix until well combined.
- Using a folding motion, slowly and gently combine the yolk mixture with the egg whites mix. This will help prevent the batter from getting clumpy.
- Grab a large baking pan and line it with parchment paper.
- Oil the parchment paper and then pour the batter in.
- Heat the oven to 350°F (180°C) and bake for about 10 minutes.
- Remove the pan from the oven, cover the cake with a towel, and then roll it up together with the towel.
Filling:
- In a mixer, beat the heavy cream.
- In a small bowl, dissolve the instant coffee in some boiling water and add it to the heavy cream.
- Add the milk and the vanilla instant pudding mix to the heavy cream.
- Beat until you get a firm cream texture.
- Unroll the cake and remove the towel.
- Spread about half the amount of the filling on the cake and roll it up.
- Use the rest of the filling to cover the outside as well.
