Ingredients
Dough:
- 4 yolks
- 11 oz. butter or butter substitute (300 g)
- 3½ cups flour
- 2¼ tsp. baking powder (10 g)
- 1 tbsp. dry yeast
- 1 tbsp. vinegar
- 2½ tsp. vanilla sugar (10 g)
- ½ cup sugar
- ½ cup ground walnuts
Merengue:
- 4 egg-whites
- A pinch of salt
- 1 cup sugar
- 1 cup walnuts (roughly crushed)
- 4 tbsp. instant coffee powder
Instructions
Dough:
- In a large bowl, knead all the dough ingredients together until you have a soft, large ball.
- If the dough is too soft, add a little bit of flour.
- Wrap your dough and place it in the refrigerator for two hours.
- Once the two hours are up, take the dough out and divide it into four parts.
Merengue:
- Just as the two hours near their end, whisk the egg whites with the salt and sugar.
- Keep mixing until you have a foam that isn’t stiff.
- Pour the instant coffee powder and keep mixing until it’s well absorbed.
- Take one of the balls, flour it, and roll it out between two pieces of parchment paper.
- Line a rectangular/round 11” cake pan (28 cm) with parchment paper.
- Place the first layer of dough in the pan.
- Using a spatula, evenly layer the dough with merengue and sprinkle crushed walnuts.
- Place the second layer on top and repeat the same process until all the layers are done.
- Poke the top layer of the dough with a toothpick to make little holes in it.
- Heat the oven to 350°F (180°C) and let it bake for 35 minutes until it’s nice and brown.
- Let it cool first, then powder it with confectioner’s sugar.
