Equipment

Paper baking cup liners or personal paper cups

Ingredients

  • 1 bar fine chocolate 60-70% cocoa (100 g)
  • 1 stick butter (100 g)
  • 1 egg
  • 1 egg yolk
  • 3⅓ tbsp. sugar (40 g)
  • 2½ tbsp. flour (25 g)

Instructions

  • Preheat the oven to 350°F (180°C)
  • In a small pot over medium heat or in a microwave-safe bowl, melt the chocolate and butter together.
  • In a separate bowl, beat the egg with the egg yolk and the sugar until you get a slightly fluffy batter.
  • While constantly mixing, add the melted chocolate mixture to the egg batter. (Continuously mixing is crucial so the eggs don’t get cooked from the heat of the chocolate).
  • Add the flour and mix until evenly combined.
  • Oil or butter the paper cups or liners or any other container you’d like to use.
  • Pour the batter in.
  • Bake for 12 to 15 minutes.

Tips

  • To make sure the souffle turns out runny from the inside, remove it from the oven as soon as the top of the souffle is set.
  • We highly recommended serving the soufflé with whipped cream, ice cream, fruit, or all of them together.
  • The amounts of ingredients mentioned above are enough for 2 servings of souffle. As such, we recommended doubling or tripling the amounts if you want to make more servings of souffle.
