Cupcakes:
- 3 cups flour
- 2¼ teaspoons baking powder (10 g)
- 1½ cups sugar
- 4 tbsp. cocoa powder
- 3 eggs
- 1 cup oil
- 1 cup boiling water
Topping:
- 1 bar dark chocolate (broken into squares)
- 8 tbsp. water
Instructions
- While preparing the ingredients, pre-heat the oven to 350°F (180°C).
- In a large bowl, add all dry ingredients and mix them well.
- In a separate bowl, beat the eggs, then add them to the ingredients bowl.
- Add the cup of oil and mix again. Then, add the boiling water and stir until everything combines.
- Grab your muffin pan and line it with cupcake paper. Then, pour your batter into each opening so that it reaches only ¾ of the height.
- Put the pan in the oven for 20 minutes. If you want to make sure the cupcakes are ready, poke a toothpick inside them. If it comes out clean, they’re ready.
- Put the topping ingredients in a small bowl, and push it into the microwave for 60 seconds.
- Stir the topping well and spread it on each cupcake with a spoon or a wide knife.
- For some extra fun, add some colorful sprinkles on top of the cupcakes. You can also use shredded coconut or ground almonds if you prefer.
