Equipment

6½ fl. oz. measuring cup (200 ml)
Muffin pan

Ingredients

Cupcakes:

  • 3 cups flour
  • 2¼ teaspoons baking powder (10 g)
  • 1½ cups sugar
  • 4 tbsp. cocoa powder
  • 3 eggs
  • 1 cup oil
  • 1 cup boiling water

Topping:

  • 1 bar dark chocolate (broken into squares)
  • 8 tbsp. water

Instructions

  • While preparing the ingredients, pre-heat the oven to 350°F (180°C).
  • In a large bowl, add all dry ingredients and mix them well.
  • In a separate bowl, beat the eggs, then add them to the ingredients bowl.
  • Add the cup of oil and mix again. Then, add the boiling water and stir until everything combines.
  • Grab your muffin pan and line it with cupcake paper. Then, pour your batter into each opening so that it reaches only ¾ of the height.
  • Put the pan in the oven for 20 minutes. If you want to make sure the cupcakes are ready, poke a toothpick inside them. If it comes out clean, they’re ready.
  • Put the topping ingredients in a small bowl, and push it into the microwave for 60 seconds.
  • Stir the topping well and spread it on each cupcake with a spoon or a wide knife.
  • For some extra fun, add some colorful sprinkles on top of the cupcakes. You can also use shredded coconut or ground almonds if you prefer.
