Chocolate Coconut Cake Recipe

Ingredients
- 4 eggs (unseparated)
- 1 cup sugar
- ½ cup oil
- 7 oz. cultured buttermilk (200 ml or ¾ cup orange juice)
- 2 cups flour
- 1 cup shredded coconut
- 2¼ tsp. baking powder (10 g)
- 1 tsp. vanilla extract
- 3½ oz. chopped chocolate (100 g)
Instructions
- Heat up the oven to 330°F (165°C) with convection.
- Oil and dust (with flour) a medium-sized baking pan or a 10” (26 cm) round baking pan.
- Sift the flour together with the baking powder into a bowl.
- Add the shredded coconut and chopped chocolate, and mix well.
- In a separate bowl, beat the eggs together with the sugar until the batter is light and fluffy.
- While beating, add the oil.
- Add the cultured buttermilk and flour mixture to the egg batter.
- Mix until smooth.
- Transfer the batter to the baking pan and bake for 25 to 30 minutes.
- After cooling down, powder with confectioner’s sugar or coat with chocolate frosting.
