Chocolate Coconut Cake Recipe

Equipment

Medium-sized baking pan or 10” round baking pan (26 cm)

Ingredients

  • 4 eggs (unseparated)
  • 1 cup sugar
  • ½ cup oil
  • 7 oz. cultured buttermilk (200 ml or ¾ cup orange juice)
  • 2 cups flour
  • 1 cup shredded coconut
  • 2¼ tsp. baking powder (10 g)
  • 1 tsp. vanilla extract
  • 3½ oz. chopped chocolate (100 g)

Instructions

  • Heat up the oven to 330°F (165°C) with convection.
  • Oil and dust (with flour) a medium-sized baking pan or a 10” (26 cm) round baking pan.
  • Sift the flour together with the baking powder into a bowl.
  • Add the shredded coconut and chopped chocolate, and mix well.
  • In a separate bowl, beat the eggs together with the sugar until the batter is light and fluffy.
  • While beating, add the oil.
  • Add the cultured buttermilk and flour mixture to the egg batter.
  • Mix until smooth.
  • Transfer the batter to the baking pan and bake for 25 to 30 minutes.
  • After cooling down, powder with confectioner’s sugar or coat with chocolate frosting.
