We’ve tried a bunch of alternatives that call for oven baking instead of frying, and this chicken leg quarter recipe is, hands down, one of our all-time favorites.
Why? Well, the ingredients and techniques are so simple. Still, the recipe gets everything just right, from the mouth-watering peppery seasoning to the perfect skin crisp on each piece. Even the color balance is on-spot, thanks to all those cherry tomatoes and parsley!

Chicken Leg Quarter Recipe: Bake Like a Pro
Ingredients
- 3 onions
- 10 garlic cloves
- ¼ bushel of parsley
- 5 chicken leg quarters (split into thighs and drumsticks)
- Salt
- Black pepper
- Paprika
- Tuscan seasoning mix
- Turmeric
- Oil
- A whole garlic head (halved)
- 10 assorted colored cherry tomatoes
Instructions
- Start by chopping the onions into even strips and aim for medium thickness.
- Rinse the chicken leg quarters well and let them sit in a strainer for 10 minutes to drain their water.
- Move all the chicken pieces to a wide bowl and add the onion strips, garlic cloves, parsley, and cherry tomatoes.
- Add the oil and the spice blend to the same bowl and mix everything well.
- Line a large baking pan with parchment paper.
- Arrange the chicken and vegetable pieces on top.
- Put the pan in the oven and bake at 400°F (200°C).
- Keep an eye on the chicken and take it out when it’s all nice and golden.
- Tips
- Feel free to put more garlic around the drumsticks and thighs on the baking pan. This way, you can add an extra flavor kick and boost the aroma even more!
