Do you use chicken filets or pre-sliced chicken breast (for schnitzel)?
You can use fresh chicken breast, sliced or pre-sliced, (for schnitzel).

Ingredients
- 2-3 lbs. chicken breast (1-1.5 kg)
Filling:
- 1 onion (sliced)
- 2 cans of mushrooms (800 g)
- A handful of cilantro (chopped)
- A pinch of salt
- Black pepper (to taste)
- Nutmeg (a little bit)
Sauce:
- 3 tbsp. date syrup
- 3 tbsp. Dijon mustard
- 3 tbsp. hot chili sauce
- 2 tbsp. water
Instructions
Filling:
- In a pan, fry the sliced onion until it’s golden.
- Once the onions are golden, add the mushrooms and fry together.
- Let them cool for a little bit, then add the cilantro, salt, black pepper, and nutmeg and mix well.
Sauce:
- In a large bowl, mix all the sauce ingredients and set it aside.
- Take each of the chicken breast slices, stuff it with the filling, roll it up, and secure it with a wooden toothpick.
- With a spoon, pour the sauce over each roll or simply dip it in the sauce.
- Place it in the oven for about 25 minutes or until the chicken gets a nice color.
