Super Nutritious Chick Pea Soup with Vegetables

Ingredients

  • 2 onions (diced into small cubes)
  • 3 tomatoes (diced)
  • 4 tbsp. oil
  • ½-¾ gallon water (2-3 liters)
  • ½ bushel cilantro
  • ½ bushel parsley
  • 4 celery leaves (chopped)
  • 2 cups chickpeas
  • 1 cup brown lentils
  • ½ tsp. turmeric
  • 1 tsp. cumin
  • 1 tbsp. soup mix
  • ½ tbsp. salt
  • Black pepper
  • A handful of thin soup noodles
  • Juice from a half lemon

Instructions

  • Heat some oil in a pan, and drop the onion. Let it fry until it reaches a fair golden color.
  • When the onion is golden, add the tomatoes and leave them for around 5 minutes, then add all the ingredients, leaving the lemon juice and the noodles til the end.
  • Cover the pot and leave the mixture to cook on low heat for 45 minutes, then add the lemon juice and noodles.
  • Leave them to cook for an additional 5 minutes, then garnish and serve!

Tips

  • If you want to add more ingredients, you can add white beans, yams, or potatoes.
  • Add some fresh parsley when serving for garnishing.
