Cheesy Spinach And Mushroom Quiche
Try this healthy quiche recipe with a bowl of freshly sliced salad on the side

Ingredients
Crust:
- 2 cups flour
- 1 tsp. salt
- 1¼ sticks cold butter (diced (150 g))
- ¼ cup cold water
- 1 tsp. baking powder
Vegetables:
- 1 large onion
- 1 package mushrooms or more (optional – replace with any other desired vegetable; broccoli, cauliflower, bell pepper strips, thinly sliced yam, spinach, etc.)
- 2 garlic cloves
Batter:
- 3 eggs
- 1 cup heavy cream / Rich’s whipped topping (250 ml)
- 1 tsp. salt
- ¼ tsp. black pepper
- ½ tsp. nutmeg
Topping:
- Shredded mozzarella
Instructions
- Put all the crust’s ingredients in the food processor, then process them until they’re fully combined. Then, store them in an airtight container and keep them in the fridge for now.
- Grab a large pan, pour a little amount of oil into it, and heat it. When it’s hot enough, drop the onion and stir it until it becomes transparent. Then, add the garlic and mushrooms. Fry them until they’re golden, then leave them to cool.
- In a large bowl, add all batter ingredients and stir them well to mix them thoroughly.
- Meanwhile, take the crust batter out of the fridge, and roll it flat on a 9-inch round baking pan (24 cm). Poke it slightly using a fork, then bake it at 350°F (180°C) for 15 minutes.
- When the crust is baked, take it out of the oven, and drop the fried vegetables on top of it. Spread the mixture evenly using a spatula.
- Pour the batter on top of the vegetables, then top them off with shredded mozzarella
- Bake the quiche at 350°F (180°C) for 25–30 minutes, then serve and enjoy!
Tips
- The ingredients listed above are only suitable for 9-inch or 10-inch baking pans (24–26 cm). If you wish to make more or less, you’ll have to adjust the quantities accordingly.
- You can freeze the quiche in plastic wrap and eat it later if you’d prefer—you can also serve it cold.
