A Wholesome Cheesecake Without Cream Cheese

Crust:
- 5 oz. graham crackers/tea biscuits (ground (150 g))
- 1 stick butter (melted (100 g))
Batter:
- 1½ lbs. quark creamy soft cheese 5% (750 g)
- 1 cup sugar
- 1 package vanilla instant pudding mix (80 g)
- 3 tbsp. cornstarch
- 7 fl. oz. sour cream (200 ml)
- 3 eggs
Instructions
Crust:
- Preheat the oven to 320°F (160°C).
- Crush the graham crackers or tea biscuits (you can use the food processor or do it by hand).
- Add the melted butter over the crushed biscuits and mix until you have a wet sand texture.
- Transfer the mixture to the pie pan and flatten it out well.
- Pat the crust firmly using your hand.
Batter:
- Place the quark creamy soft cheese into a large bowl with the sour cream, and mix well.
- Add the sugar and the vanilla instant pudding mix.
- Beat well until the dry ingredients disappear.
- Add the eggs and cornstarch.
- Give it another good mix until you have a smooth batter.
- Pour the batter over the crust.
- Bake for about one hour and 15 minutes until the edges are golden and the middle is firm.
- Remove the cheesecake from the oven, and let it cool at room temperature.
- Place it in the fridge for a few hours.
