When you slice into the crispy puff pastry layer, you’ll dig into tender beef with a seasoning mix that’s on par with your favorite meatballs. Dig even deeper, and you’ll be welcomed by the familiar, soft texture of cooked cauliflower.

Is the cauliflower going to release its liquids while baking?
Nope! Just let it strain and cool down well before assembling the meatloaf.
Is the meat going to cook under the puff pastry?
Yes, don’t worry about it. As long as you adjust the oven temperature and leave the meatloaf inside for at least an hour, it’ll cook all the way through.

Ingredients
- 1 lbs. ground beef (½ kg)
- 1 onion
- 1 cauliflower
- 2 eggs
- Olive oil (to taste)
- Salt (to taste)
- Coarse black pepper (to taste)
- Sweet chili (to taste)
- Parsley (to taste)
- Cilantro (to taste)
- 1 package puff pastry dough
Instructions
Cauliflower Prep:
- Remove the green leaves.
- Boil the veggie itself until it’s only halfway soft.
- Strain the cooked cauliflower and put it on parchment paper.
- Season it with olive oil, salt, and coarse black pepper.
- Set the cauliflower aside to cool down.
Meatloaf Assembly:
- In a bowl, mix the ground beef with parsley, cilantro, and chopped onion.
- Add olive oil, salt, and pepper to season the beef.
- Pour the meat all over the cauliflower.
- Using your hands, spread the beef downwards to cover up all the exposed cauliflower.
- Roll your puff pastry dough into two large squares.
- Grab one sheet and use it to wrap the meatloaf.
- Brush the first layer with an egg.
- Make slits in the second sheet and put it carefully over the first one.
- Brush again with the egg.
- Pop the meatloaf into the oven and bake at 350°F (180°C) for a little over an hour.
Tips
- If you don’t mind eating your meatloaf spicy, add a bit of sweet chili in step no.4.
- It’s hard to estimate how long the meatloaf will take to cook, but you can always tell by looking at the puff pastry—it should be crispy and dark!
