There are tons of variations to the classic, savory pot pie, but our favorite ones are almost always creamy, fulfilling, and easy to whip up in a rush.

This creamy broccoli cheese pot pie just happens to check all the right boxes, and we had to share it with you.

Before you get all flustered, the answer is no, you don’t need a crust for this pie.

What you’ll need is a simple list of ingredients, a reliable baking pan, and a friend with a massive appetite to help you finish this bad boy up!

Creamy Broccoli Cheese Pot Pie

Ingredients

  • 1 bag of frozen or fresh broccoli (800 g)
  • 1 large onion (chopped)
  • 2 garlic cloves (chopped)
  • 4 eggs
  • 7 fl. oz. sour cream (200 ml)
  • 8 fl. oz. heavy cream (250 ml)
  • 3 heaping tbsp. grated feta cheese
  • 1 tbsp. soup mix
  • 3 tbsp. flour
  • 1 tsp. baking powder
  • Some nutmeg
  • Black pepper
  • 2 tbsp. golden breadcrumbs (for topping)

Instructions

  • In a bowl, pour boiling water over the broccoli and add some salt.
  • Soak fresh broccoli for 10 minutes and then strain it.
  • Chop the strained broccoli florets.
  • Grab a large pan and fry the onion until it’s evenly golden.
  • Add garlic to the frying pan and let them cook a little.
  • Add the chopped broccoli to the pan and stir-fry for a few minutes.
  • Let the stir-fry broccoli mix cool completely.
  • Mix the eggs, heavy cream, and sour cream with the stir-fry in a large bowl.
  • Gradually add the flour, baking powder, and spices into the bowl.
  • Mix everything well until there are no flour clumps left in the batter.
  • Oil a Pyrex baking pan well and pour the bowl’s contents into the pan.
  • Top the batter with breadcrumbs.
  • Put the pan in the oven and bake at 350°F (180°C) for 45–60 minutes.

Tips

  • If you’re all out of broccoli, we’d recommend grabbing a bag of cauliflower instead—it’s a close enough match.
    However, if you want a starchy twist, go for diced yams.
