Easy and Quick Tortilla Bourekas

Equipment

Parchmentpaper-lined baking pan

Ingredients

  • 12 tortillas
  • 1 lb. cottage cheese (500 g)
  • 7 oz. shredded cheese (200 g)
  • 10 oz. feta cheese or shredded mozzarella (300 g)
  • 2 eggs
  • Salt
  • Black pepper
  • Some milk
  • Sesame (optional)

Instructions

  • In a large bowl, mix all the types of cheese with one of the two eggs
  • Whisk the remaining egg with some milk in a small bowl to make an egg wash
  • Brush the tortillas with the egg wash
  • Fill each tortilla with about three tablespoons of the cheese mix
  • Roll the tortillas and close their two ends in the process by folding them in (to keep all the melted cheese inside)
  • Lay them on a baking sheet (open face down)
  • Brush the tortilla rolls with a beaten egg and sprinkle some sesame on them
  • Bake for about 20 minutes until they get a golden color (and the cheese melts)
